Rosemary (Salvia rosmarinus)

It is a perennial plant of bushy growth, with woody stems, small green, narrow and pointed leaves. Great for making topiaries (sculptural pruning). It can reach 2 to 5 feet tall. When it blooms, in early spring, it puts out pale blue or pink flowers, favorites of bees. After flowering, a maintenance pruning is recommended.

As it has a strong smell, at a culinary level it is recommended to use its leaves sparingly when seasoning stews, roast meats such as pork, beef and lamb. Also with birds and fish. You can place some fresh branches in olive oil to season and even bake bread with this herb.
