Burgundy okra has green leaves with burgundy stems, ribs, and branches. The 6"-8" long burgundy pods turn green when cooked. Okra is used as a thickening agent in Cajun gumbo, but it can also be boiled, fried, roasted, grilled, steamed, canned, or pickled. Okra has attractive, edible flowers.
